2 2/3 cups flour     1 teasp salt     1 cup unsalted butter, softened

1 cup sugar       1 large egg      1 teasp vanilla

9 oz. white chocolate, chopped - melted

Line 2 cookie sheets with parchment paper, set aside.

Whisk together flour and salt.  In another bowl, combine butter and sugar and

beat with an electric mixer on medium high speed for about 4 mins. or until

light and fluffy.  Beat in egg and vanilla.  On low speed, stir in the flour mixture.

Wrap the dough in plastic wrap and chill until firm, about 1 1/2 hours.  Roll

1" balls of dough and place 1 inch apart on prepared sheets.  Flatten each one

slightly, using your finger or a round half teaspoon, make an indent in the center

of each one.  Bake at 350 for about 15 mins, until cooked thru but not golden.

Re-indent if needed after baking.  Spoon melted white chocolate into each one.

Let set about 1 hour.  Store in an airtight container.   Makes about 5 1/2 dozen.
