1 1/2 cups sugar 1/2 cup softened butter 1 egg
1/2 cup milk 3 1/2 cups flour 2 teasp cream of tartar
1/2 teasp salt 2 teasp baking soda
Cream sugar and butter, add egg and milk. Combine
dry ingredients and blend into creamed mixture. Chill
dough for 1 hour.
Filling: 1/2 cup sugar 1 1/2 cups chopped green tomatoes
1 teasp cornstarch
Cook until thickened, add in 1 lemon's rind and the juice
Blend well, continue cooking until bubbly. Cool, then chill.
Take out dough and roll out, cut into rounds. Take one round,
top with 1 Tablsp filling, top with another round, seal edges.
Place on cookie sheets....bake at 350 for 15-20 mins.
