6 large eggs 3/4 cup sugar 1/4 teasp salt
4 cups whole milk, divided 1 Tablsp vanilla extract
1 teasp grd nutmeg 1 cup heavy whipping cream
add whipped cream and nutmeg - Optional
In a saucepan, combine eggs, sugar and salt, gradually add in
2 cups of the milk. cook over low heat, stirring constantly until a
thermometer reads 160 degrees, about 25 mins. Pour into a bowl, stir
in the vanilla nutmeg and the remaining milk. Place this bowl into a
larger bowl with ice to cool the mixture down, stir frequently. Cover and
chill for at least 3 hours. when ready to serve, in a small bowl, beat cream
on high speed until soft peaks form, fold into the egg nog and pour into a
chilled punch bowl. If desired, top with additional dollops of whipped
cream and dustings of nutmeg.
TO SPIKE: add 3/4 cup rum, brandy OR bourbon.....NOT ALL THREE!
