1 egg 1/2 cup milk 23 saltines, crushed 2/3 cup flour 3/4 teasp salt
1/4 teasp baking powder 1/4 teasp cayenne pepper 1/4 teasp black pepper
4 beef cube steaks 3 Tablsp canola oil
In a shallow bowl, combine egg and milk - set aside.
In another bowl, combine crumbs, flour, salt, powder, cayenne and black peppers.
Dip steaks in egg mix, then into cracker crumb mixture. In a large skillet, heat oil, brown
the steaks on both sides, cook for a few minutes until done. Set aside to a warm plate.
In the skillet, add these ingredients to make the gravy:
2 Tablsp flour....stir to loosen browned bits in the pan, then add:
1 1/3 cups milk Bring to a boil and cook, stirring constantly until thickened and bubbly.
Add S&P to taste. Serve over meat with mashed potatoes! makes 4 servings.
