In a large skillet, heat 2 Tablsp of oil over medium-high heat. Add in:
1 cup diced onions 2 cups sliced fresh mushrooms (8 oz. pkg)
2 cups sliced zucchini OR 1 cup sliced zucchini and 1 green bell pepper, diced
Cook until tender crisp, stirring occasionally. Add in:
1 pound boneless, skinless chicken, cut into 1" pieces,
cook about 5-7 minutes more, stirring and cooking until chicken is done. Add:
14.5 oz. diced tomatoes (Italian style) - undrained
1/4 cup tomato paste salt and pepper to taste
Cook through and serve over rice.
