2 large sweet potatoes, peeled and cut into 2" pieces
1 large onion, cut into wedges
1 large red bell pepper, cut into 2" pieces
2 Tablsp extra virgin olive oil 1/2 teasp salt
1 teasp ground ginger 1/2 teasp ground allspice
1/2 teasp ground cinnamon 2 pound boneless pork loin
Preheat oven 400. Place potatoes, onion and bell pepper in a large
roasting pan. Drizzle with oil and sprinkle with 1/4 teasp of the salt,
toss to coat well. Push the veggies to the perimater of the roaster. In
a small bowl, combine the remaining salt, ginger, allspice, cinnamon
and blend well. Rub over the pork loin, place in the center of the pan,
nestled in the veggies. Cook for 1 hour, until a meat thermometer
reads 155 and juices run clear. Let stand for 10 mins before slicing.
