Parmesan Pork Roast
4 pound boneless whole pork loin roast
2/3 cup grated parmesan cheese
½ cup honey
3 Tablsp soy sauce
2 Tablsp dried basil
2 Tablsp minced garlic
2 Tablsp olive oil
½ teasp salt
2 Tablsp cornstarch
¼ cup cold water
Cut the roast in half and place in a sprayed 3 quart slow cooker. In a small bowl, combine the cheese, honey, soy sauce, basil, garlic, oil
and the salt. Mix very well, and pour over the pork roast. Cover and cook on low for 5-6 hours, or until a meat thermometer inserted reads
160 degrees and the meat is tender. Remove meat to a serving platter and keep warm. Bring liquid to a boil in a saucepan, add in the cornstarch mixture and cook until thickened, about 2 minutes. Slice roast, and serve with the gravy.
