Meatloaf

2 pounds lean ground beef
1 cup oatmeal
2/3 cup milk
Small onion, diced
1 ½ teaspoon salt
½ cup grated carrot
1 cup shredded cheddar cheese
Blend well, place into a loaf pan … put “dent” in top of loaf.
Make sauce:
1 cup catsup
¼ cup cider vinegar
½ cup water
4 Tablsp brown sugar
small onion, diced
Cook to a boil, simmer for 5 minutes, stirring often. Take half of this sauce and pour over the top of the meatloaf in the pan. Bake at
350 for 1 hour. Slice and serve with the rest of the sauce.
