Mandarin Ham Rolls

11 oz. can mandarin oranges, drained
1 ½ cups cooked rice
1/3 cup mayonnaise
2 Tablespoons chopped pecans
2 Tablespoons snipped parsley
1 Tablespoon minced onion
8 slices deli ham
¼ cup orange marmalade
1 Tablespoon lemon juice
¼ teaspoon ground ginger
Reserve 8 orange sections for garnish. Chop the remaining oranges and add to the cooked rice, mayo, pecans, parsley and onion. Divide this mixture between the ham slices, then roll up jelly roll style and place them seam side down in a sprayed 10x6x2 pan. Combine the marmalade, lemon juice and the ginger. Brush some of this on top of the ham rolls. Bake uncovered at 350 for 25 minutes, brushing occasionally with remaining sauce. Garnish with the reserved orange slices – makes 4 servings.
