Apple Glazed Pork Roast

12 oz. jar apple jelly
4 teaspoons Dijon mustard lemon juice
2 ½ pound boneless pork loin salt and pepper
1 Tablsp apricot brandy
In a small saucepan, melt jelly over low heat. Stir in the mustard and 1 teaspoon lemon juice. Set aside. Rub roast generously with salt and pepper. Place on a rack in a shallow, foil lined roasting pan. Roast at 350 for 45 minutes. Brush with the jelly mixture and continue roasting for 45 minutes more….or until a meat thermometer reaches 165 degrees. Let stand until the thermometer registers 170. Scrape the pan drippings into the remaining jelly, add in 2 teaspoons lemon juice and the brandy and heat through. Season with additional salt and pepper.
Slice the roast thin, serve with the sauce on the side.
