Chicken n’Cheese Enchiladas
1 can cream of chicken soup
½ cup sour cream
1 cup picante sauce OR salsa
1 ½ - 2 teaspoons chili powder
2 cups chopped cooked chicken
½ cup shredded cheese
4-6 six inch flour tortilla’s lettuce, diced tomato, diced green onion Stir together the soup, sour cream, picante sauce and chili powder. Stir
1 cup of this mixture with the chicken and cheese in a large bowl.* Divide this between the tortilla’s, roll up and place in a sprayed baking dish.
Pour the remaining sauce over the top, cover with foil and bake at 350 for 35-40 minutes. Garnish with lettuce, tomato and onion. *If you want, you can add in 1-1 ¼ cups of cooked white rice to the chicken mixture to make this a little heartier.
