12 oz. penne pasta
2 cups fresh or frozen green beans
1 ¼ cups ham, cut into strips
½ cup thin sliced green onions
3 cups milk
4 Tablespoons butter
2 cups grated Parmesan cheese
¼ cup all purpose flour
½ teaspoon black pepper
2 cups diced fresh tomatoes
1 cup bread crumbs
¾ cup grated cheddar cheese
Preheat oven to 350, spray a 9x13 pan and set aside. Cook pasta according to pkg directions. Cut green beans into 2” lengths. Add the beans to the boiling pasta water the last 3-4 minutes of cooking time. Drain all well, then put into a large bowl. Stir in the ham and the green onions. Bring milk and butter to a boil in a saucepan, carefully pour it into a blender….add parmesan cheese, flour and the pepper. Cover and puree for 15 seconds or until smooth and creamy. Pour over the pasta mixture and blend well, put into the prepared pan. Sprinkle with the tomatoes. Combine crumbs and cheddar cheese, sprinkle over the top. Bake for 20-25 minutes.
