1/2 cup buttermilk* 1 clove of garlic, minced
1/2 teasp hot pepper sauce
Blend well and place in a shallow pan.
Put in 4 skinless chicken breasts on the bone.
Turn to coat, place breast side down. Cover and
marinate for 30 mins or up to 8 hours.
Preheat oven to 425. Place a rack in a baking sheet withsides
(Jelly roll pan) and coat with cook spray).
In a large zip top bag:
1/2 cup whole wheat pastry flour 2 Tablsp ground flaxseed
1 teasp baking powder 1/4 teasp ground red pepper
1/4 teasp salt
Blend well....put chicken in, one piece at a time. Seal bag and
shake well to coat. Place on rack and repeat until done.
Spray chicken with no stick spray. Bake for 45 mins.
