2 teasp chili powder 1 teasp grd cumin 1 teasp minced garlic
1/2 teasp dried oregano 1/2 teasp crushed red pepper flakes (Optional)
1 pound grd beef 1/2 cup chopped onion two 8 oz. cans tomato sauce
15 oz. can black beans, drained/rinsed 8-9 oz. can corn, undrained
4.5 oz. can chopped green chilies, undrained six 8" flour tortilla's
2 cups shredded cheddar cheese
Brown beef and onion in a large skillet, drain well. Add sauces, beans, corn
and chilies. Mix well, stir in all spices except red pepper. Bring to a boil, reduce
heat to low and simmer for 5 mins. Add red pepper if desired. Spread 1/2 cup of
the beef mix on the bottom of a 9x13 pan sprayed with no stick spray. Top with
3 of the tortillas. Layer with half the remaining beef and half the cheese, repeat
with tortillas, beef and cheese. Bake at 350 for 15 mins or until heated thru.
