15 oz black beans, rinsed and drained
15 oz whole kernel corn, rinsed and drained
two 10 oz tomatoes with green chilies, drained
1 cup ricotta cheese 1/2 cup sour cream 1/2 teasp grd cumin
eight 6" corn tortilla's 1 cup mexican shredded cheese
Preheat oven to 375. combine beans, corn and tomatoes
in another bowk, combine ricotta, sour cream and cumin.
Place two tortillas in a baking dish, top with 1/3 cup ricotta mix,
and 1/2 cup bean mix, sprinkle with 1/4 cup of the cheese.
repeat layers 3 times.
bake for 20 minutes.
