1 yellow delicious apple, peeled/cored/diced 6 slices bacon, fried/crumbled
4 large boneless, skinless chicken breasts 1 cup apple juice
Chicken Rub:
2/3 cup chili powder 1/2 cup sugar
4 Tablsp kosher salt 4 Tablsp onion powder
4 Tablsp garlic powder 1 teasp cayenne pepper
Blend well, but into an airtight container before use.
Heat smoker to 300 degrees. In a small bowl, combine apple and bacon.
Using a sharp knife, cut a pocket in the thickest part of the chicken, spoon
the apple mixture into each breast pocket, secure closed with toothpicks.
Apply the rub to the outside of the chicken. Put each piece together in a large
aluminum pan. Place in the smoker and cook, spritzing with apple juice
every 15 mins, for one hour or until internal temp reaches 165 degrees. Take
out , allow to rest...loosley covered for 10 mins. Serve and enjoy!
