1 pound pork tenderloin, cut into 1" slices...then pounded to 1/2" thick

1/4 teasp each:        salt and pepper

2 Tablsp olive oil                                         medium onion, diced

1/2 cup sliced fresh mushrooms             2 cloves garlic, minced

5 oz. can evaporated milk                              2-3 Tablsp dijon mustard

1 Tablsp soy sauce              1 Tablsp honey                 cooked noodles, baked potato OR rice

Sprinkle meat with S&P.  Heat oil in large skillet over medium heat, cook pork until no

longer pink....remove and keep warm.  In the same skillet, saute onion and mushrooms until

tender.  Add garlic and cook for another minute.  Stir in the milk, mustard, soy sauce and honey.

Cook until heated thru, stirring often.  Add meat back in and heat thru.  Serve with pasta or

potato.
