1/2 cup flour      1 teasp salt     1/4 teasp black pepper

1 pound beef liver, cut into small pieces

large onion, thin sliced       2 medium bell peppers, 1" pieces

4 Tablsp canola oil          1 Tablsp cornstarch         1 cup beef broth

2 Tablsp soy sayce                hot cooked rice or noodles

In a large re-sealable plastic bag, combine the flour salt and pepper. 

blend well, then add in the liver and toss to coat.

In a large skillet, saute the onion and peppers in half the oil until

tender crisp.  Remove them and set aside to a plate.  Add the rest

of the oil to the skillet, saute the liver until done (no longer pink).

this should tak about 5-7 minutes.  In a small bowl, combine the cornstarch,

broth and soy sauce......stir into the skillet and bring all to a boil, cooking and

stirring for several minutes until thickened.  Return the veggies to the skillet

and heat thru.   Serve over rice or noodles.
