Warm Steak and Potato Salad
From: Barb of Fostoria

1 pound new red potatoes            3 strips of bacon                1 small red onion, diced
1 pound beef sirloin                     ¼ teaspoon salt                 5 Tablespoons honey
5 Tablespoons cider vinegar         1 cup grape tomatoes         ½ teaspoon cornstarch
½ teaspoon water 6 oz. baby spinach
Cook potatoes until tender, when cool enough cut into quarters. Fry bacon until crisp, set aside. In the drippings, cook the onion, then add in the steak which you have cut into strips. Cook until done, sprinkle with salt and set aside. In the same skillet, add in the honey and vinegar and stirring well cook for 2 minutes, add in the cornstarch and water mixed together. Cook until thickened. Combine all and serve over the spinach – garnish with the tomatoes.
