Cajun Meatloaf Patties
4 Tablsp butter               2 cups diced onion            1 cup diced green bell pepper
2 teasp salt                   1 teasp black pepper          1 ½ teasp cayenne pepper
1 teasp dried thyme        ½ teasp grd cumin            2 pounds ground beef
2 large eggs, beaten       1 cup dry bread crumbs     ½ cup catsup
2 teasp Worcestershire Preheat oven to 375
Melt butter in a heavy skillet over medium low heat. Add onion and bell pepper, season with salt, pepper, cayenne, thyme and cumin. Cook, stirring frequently until transparent and tender, about 10 minutes. In a large bowl, combine beef, beaten eggs, bread crumbs, catsup and Worcestershire. Stir in the cooked onion mixture and blend well. Line a baking dish with foil, shape the meatloaf mixture into 8 large hamburger like patties. Arrange in the lined pan. Bake 15-20 minutes. Drain well and serve!

Tried these last night... they were excellent. In fact, I made up a lot of the seasoned meat and am using it in a chili - which was excellent too!
