marinade:
4 green onions, chopped 2 cloves of garlic, minced
grated zest of 2 limes 1/4 cup fresh squeezed lime juice
1/4 cup olive oil 1/4 cup chopped fresh cilantro little kosher salt
blend well.
4 boneless, skinless chicken breasts - cut into 1/2" strips
2 red bell peppers - cut into 1/2" strips
2 green bell peppers - cut into 1/2" strips
1 large red onion - cut into 1/2" slices
8 large flour tortilla's sour cream, lettuce, tomatoes, etc.
Place chicken, peppers and onion in a large sealable plastic bag....
add marinade and seal. Turn several times while in the fridge for
several hours. Drain well and cook in a large skillet until chicken is done
and veggies tender crisp. Serve on tortilla's.
