16 oz. whole wheat penne pasta, cook/drain - place in a large bowl and drizzle with olive oil
one large onion, diced 2 medium zucchini, halved, diced 2 cloves of garlic, minced
1 1/2 pounds boneless, skinless chicken breast - cut into 2" strips
1 teasp dried basil 3 large fresh tomatoes, seeded, diced
1 1/2 cups chicken broth fresh parmesan broth
Heat oil in a large skillet over medium heat, add onion and zucchini and cook, stirring for a
few minutes until lt. browned. Add chicken, garlic and basil and continue cooking and
stirring a few minutes more. Add tomatoes, and the broth and bring to a simmer. Cook,
uncovered for about 10 mins, until flavores blend and chicken is cooked. Stir well, toss with
the pasta and sprinkle with cheese! Enjoy!
