one leg of lamb     2-3 cloves of garlic    4 Tablsp butter, melted

3 Tablsp lemon juice     2 cups hot water

20 small potatoes, peeled     2 Tablsp tomato paste

Wash lamb, slit with a sharp knife in various places on both

sides of the lamb.  Slice the garlic thinly and place in the slits.

Season with S&P, brush with butter.  Sprinkle with juice.

Place in a roasting pan, fat side up.  Roast at 450 for 1/2 hour.

Take out, add potatoes that have been rubbed with the tomato

paste.  Add water to the pan.  Bake at 350 until internal temp

of lamb reaches 160-170 degrees,  Remove lamb to platter

to keep warm. Increase oven to 425 and roast potatoes for

20 mins more.
