4 oz. Canadian bacon 1 Tablsp olive oil one large sweet Vidalia onion, diced
6 green onions, diced 3 Tablsp red wine vinegar 1 Tablsp frozen apple juice concentrate
1 Tablsp dijon mustard 1 teasp dried thyme 10 oz. pkg fresh spinach leaves
8 oz. pkg white mushrooms, sliced OPT: 1/4 cup toasted, chopped walnuts
Heat the bacon in a large non stick pan sprayed with no stick spray. Just til browned on each side,
put on a cutting board and cut into strips, set aside. In the same skillet, heat the oil. Add the onions
and cook, stirring often until tender. Add the vinegar, apple juice concentrate, mustard and thyme.
Cook, stirring occasionally for 2 mins or until heated thru. Place the spinach and mushrooms in a
large serving bowl, drizzle with onion dressing, toss well to coat. Sprinkle with the bacon strips and
the nuts, if used. Maikes 4 servings.
