5 small-med Granny Smith apples, cored/diced 2-3 ribs celery, diced
3/4 cup walnuts, toasted & rough chopped 1/2 cup raisins
1 Tablsp lemon juice 1/2 pound crab meat - cleaned/de-shelled
1 1/2 cups plain yogurt 1/4 cup honey 1/2 cup blue cheese crumbles
1 Tablsp fresh thyme leaves, picked off stems salt & pepper to taste
Combine apples, celery, walnuts and raisins....add in lemon juice and toss
lightly to coat the apples and the mixture. Add crab and fold in to combine.
In another bowl, combine yogurt, honey, cheese and thyme, season with
S&P. Toss apple crab mixture with just enough yogurt dressing to lightly
coat the salad. Serve with the remaining dressing on the side.
Makes 6-8 servings.
