1 small fresh pineapple

Cut off the leafy top and enough of the bottom so fruit rests

flat on the cutting board.  Slice off the skin and remove any

eyes with a paring knife.  Cut fruit into 4-5 slices.  Grill 2

minutes per side or until fruit starts to brown.  Cool & dice.

Add remaning ingredients to the cubed pineapple:

1 small red onion, diced

3 Tablsp chopped cilantro leaves

2 Tablsp fresh lime juice

1 Tablsp rice veingar

2 Tablsp extra virgin olive oil

1 teasp salt               1/2 jalapeno, seeded & minced

Blend well, serve.
