Fruit Cocktail Cake From: Judy of Findlay
1 egg
1 cup sugar
1 cup flour
½ teaspoon salt
1 teaspoon baking soda
1 teaspoon vanilla
1 cup chopped walnuts
14 oz. can fruit cocktail
¼ cup brown sugar
Spray a 9x13 pan, preheat oven to 350. Combine the 1 cup of sugar, flour, salt and soda….add in egg and vanilla and blend well, then add in the entire can of fruit cocktail with juice and fold in gently. Pour batter into your prepared pan. Sprinkle with brown sugar. Bake for 35 minutes. Take out, let cool slightly and serve with CoolWhip.
