Crunchy Pea Salad
10 oz. pkg frozen peas                            1 cup diced celery
1 cup chopped fresh cauliflower florets      ¼ cup diced green onions
1 cup chopped cashews                          ¼ cup crisp cooked, crumbled bacon
¼ cup sour cream                                   ½ cup Ranch salad dressing
¼ teaspoon Dijon mustard                       1 small clove of garlic, minced
Thaw and drain the peas. Combine peas, celery, cauliflower, onion, cashews, bacon
And the sour cream. In a small bowl, combine dressing, mustard and garlic.
Pour half the dressing mixture over the salad and toss gently. Add more if needed –
Chill until ready to serve, and then add more dressing if needed then. Apparently the
Amount of dressing is quite a bit.
