Dressing:   3 Tablsp olive oil        1 teasp catsup             1 teasp dijon style mustard

1 teasp red wine vinegar              1 teasp lemon juice         1/2 teasp minced garlic

up to 1 teasp fine chopped jalapeno pepper              6 oz. sweet potato (average size), diced

1/2 cup small diced red or green bell pepper               1/4 cup minced red onion

few teaspoons of minced fresh cilantro leaves

Whisk together the dressing ingredients.  Put the potatoes in a small pan with water to cover.  Add a little

salt and bring to a boil.  Reduce heat and simmer until just tender, about 10 mins.   Drain well and

rinse with cold water.  Combine potatoes, bell pepper, onion and some cilantro.  Add the dressing

and mix well.  Taste and season with S&P.
