Curried Cranberry Chicken Salad
1 cup mayonnaise or salad dressing
2 Tablespoons lime juice                         1½ teaspoons curry powder
4 ½ cups diced cooked chicken               2 Granny Smith apples, diced
1 cup diced sweet cranberries                 1 cup thin sliced celery
½ cup diced pecans                               ¼ cup diced green onions
Combine mayo, juice and curry powder in a large mixing bowl. Stir in the remaining ingredients. This is best prepared and served within 8 hours. This is enough for 6-8 servings.
