4 small sweet potatoes, baked at 400 for 1 hour

cool, then peel & cut into 3/4" chunks

Put into a large bowl and   add in:

4 ribs of celery, 1/4" slices

1 small red bell pepper, 1/4" pieces

1 cup fresh pineapple, diced

2 green onions, chopped

Make dressing:

1/4 cup mayonnaise OR Miracle Whip

plus 1 Tablsp dijon mustard

Blend well, mix with salad....chill at least 1 hour.

Just before serving, add in 1/2 cup chpd pecans.
