1 pkg storebought couscous (whole wheat)            1/2 pint of yellow cherry tomatoes, halved

6 oz. Feta cheese, cut into small pieces                                      15 oz. can chick peas, drained

small bunch green onions, finely chpd (green parts only)                  1 teasp cajun spice

small bunch fresh cilantro, finely chpd                                                  1-2 heads Belgian Endive

In a small pot, prepare couscous according to pkg directions.  Allow to cool for 20

mins in the refrigerator.  Combine all ingredients, except the endive,  and mix well.

Allow to sit overnight.  Clean and separate the endive leaves....stuff and serve.
