3 pounds sweet potatoes, peeled, chunked      2" piece of fresh ginger, peeled/grated

1/2 cup chopped green onions                       1/4 cup extra virgin olive oil              

1 teasp grated lime zest                 2 Tablsp fresh lime juice       sea salt & fresh black pepper

Put sweet potato pieces in a large pot, cover with water and boil for 15 mins or until

cooked thru, but not too soft.  Drain well and put into a large bowl.  Add green onions and

set aside.  Make the dressing by whisking together the oil, ginger, zest and the juice.  Mix well,

add in some salt and pepper to taste.  Pour over the potatoes and toss well.  Serve warm or at

room temp.
