Watermelon Preserves
4 cups diced white rind of watermelon
3 cups granulated sugar
3 lemons, seeded, sliced
Cook on a low simmer for 2-3 hours, then add in:
1 cup crushed pineapple
Cook to 220 degrees on a candy thermometer. Carefully put into prepared half pint jars and seal.
