20 large tomatoes, peeled and chunked 6 peaches, peeled/diced
6 pears OR apples, peeled and diced 6 medium onions, diced
3 green bell peppers, diced 3 red bell peppers, diced
4 cups sugar 2 Tablsp salt 3 cups vinegar (white or cider)
1 small box pickling spice (put into a cooking bag & tied)
Mix all together, simmer until cooked down halfway. Stir often so this
doesn't scorch. Put into jars and seal.
Great over cream cheese as an appetiser, or serve as a sauce with ham or pork!
