2 pounds grd. beef 2 cups diced onions
two 15 oz cans pinto beans*-rinsed/drained
15 oz can kidney beans, rinsed/drained
15 oz can whole kernel corn, drained
14 oz. can mexican style stewed tomatoes
14 oz. can stewed diced tomatoes
14 oz. can stewed tomatoes with chilies
two cans diced green chilies
4.6 oz. can sliced black olives, draind/sliced
1/2 cup green olives, sliced
one envelope taco seasoning mix
one envelope ranch dressing mix
Brown beef and onions, drain well. Place in sprayed crockpot or
soup kettle. Add remaining ingredients and mix well. Cook in crockpot
on low, covered for 6-8 hours. Simmer in soup kettle over low heat for
about 1 hour or so. To serve, put a few corn chips in your bowl, top
with a little shredded cheese. Add hot soup, then garnish with green onions
and maybe a slice of jalapeno if you dare!
