1 Tablsp oil 1/2 cup diced onion 1/2 teasp minced garlic
1 env. taco seasoning mix 28 oz. can diced tomatoes, undrained
15 oz can pinto beans, rinsed/drained 9 oz can whole kernel corn, drained
4 oz. can diced greenc hilies 1 cup beef broth + 1/2 teasp cornstarch
1 can Brinkman's chicken
In a large saucepan, heat oil....add onion and garlic and cook over medium high heat for several minutes until onion is tender. Add in taco seasoning,
tomatoes, beans, corn and chilies and mix well. Stir in broth mixture and chicken. Bring to a boil - stirring frequently. Reduce to low and cook uncovered for 30 mins stirring occasionally. Or place in a crockpot and cook on low for several hours. Garnish with sour cream, tortilla chips and fresh cilantro.
