1 red bell pepper 1 green bell pepper
large sweet vidalia onion
Slice into thin julienne strips.....saute in 1 Tablsp oil
over medium high heat in a large skillet just until veggies
begin to soften, about 2 mins.
1 pound frozen sirloin or rib eye steak....thaw slightly, then slice
very thin across the grain. Turn skillet to high and add in the meat
slices...stir and cook until lt brown, turn off the heat and add in:
2 Tablsp worcestirshire, mix well.
In a bowl, combine: 4 oz. grated provolone & 4 oz. grated Monterey jack
Lay four 10" tortilla's on the counter/workspace and top each one with
1/3 cup of the cheeses. Spread each with 1 cup of the steak mixture,
then another 1/3 cup of the cheese. Slide one of these into a 10" skillet
over medium heat. Place another tortilla on top. Press down with a
wide spatula to remove air pockets, cover and cook 2 minutes to brown.
Check frequently, then flip and brown the other side. Repeat with all 4!
Cut into wedges and serve.
