Sweet Potato & Corn Chowder
12 oz. kielbasa or andouille sausage
1 cup diced onion
1 cup diced celery
1 Tablsp. minced garlic
3 Tablsp. flour
1 ½ teasp grd cumin
1 ½ teasp chili powder
1 teasp Cajun seasoning
6 cups chicken broth
16 oz. frozen corn
2 cups 1/2" cubed peeled sweet potatoes (about 2)
12 oz. boneless skinless chicken breast, cut up
1 cup whipping cream
1 teasp fresh ground black pepper
Halve sausage lengthwise, then ½ slices….put into large kettle and sauté for 5 minutes, stirring occasionally.
Add onion, celery and garlic and cook for 5 minutes. Stir in flour, cumin, powder and Cajun seasoning. Cook and stir for 2 minutes. Stir in broth mix well and bring to a boil. Add corn, potato and chicken, simmer, covered for 20 minutes. Add in the cream and pepper, and heat thru, but do not boil.
