1/2 cup mayonnaise 1 Tablsp fresh squeezed lime juice
1 teasp jalapeno, seeded & diced 1 teasp dijon mustard
Blend well, chill until ready to use.
1 egg, beaten with 1/2 cup milk in a shallow dish.
2 cups panko bread crumbs - put in a dish
1 pound white fish fillets, cut into 3x1 inch strips
Dip fish into egg, then into crumbs.
In a large skillet, heat 1/4 cup oil, saute fish for 4 mins on each
side until golden brown. Place four 8" tortilla's (flour or corn)
on a platter...top with shredded lettuce, fish, salt and pepper and
some mayo. roll up and enjoy!
