15 oz. can black beans, rinsed&drained
14 oz. can diced tomatoes with green chilies, undrained
6 oz. ready to use southwestern chicken strips
1 cup shredded cheddar cheese
1/2 cup shredded mozzarella cheese
eight 8" flour tortilla's
no stick spray
Combine the beans, tomatoes, chicken...bring to a boil....reduce
heat and simmer, uncovered for 5-8 mins or until thickened.
Combine both cheeses. Sprinkle half of the tortilla's with the
cheese, layer with the chicken mixture and then the remaining
cheese. Top with remaining tortilla's. In a large skillet over medium heat,
spray with no stick spray. Cook each quesadilla for 2 mins on each
side until cheese is melted and they are browned. Cut into wedges
with a pizza cutter wheel.
