14.5 oz can Dei Fratelli petite diced tomatoes with juice
1 cup Dei Fratelli crushed tomatoes 3 Tablsp extra virgin olive oil
1 medium onion, diced 4 garlic cloves, minced 1 carrot, diced
1 rib of celery, diced large zucchini, cubed 2 cups shredded cabbage
1 can pinto beans, drained/rinsed 1 can rinsed/drained diced potatoes
8 cups chicken broth OR water salt and pepper
1 cup grated 6 cheese Italian blend cheese 2 cups cooked drained pasta
Heat oil in soup pot, add onion and cook until soft. Add carrot, celery, garlic, cabbage, zucchini - cook about 3 mins. Add tomatoes, poatoes, broth and
the beans. Season with S&P. Bring to a boil, reduce heat and simmer for 45
mins. Take off heat, stir in cheese. Add in
2 cup cook pasta, stir well, cover and let sit for 5 mins before serving.
