4 Tablsp butter 6 Tablsp flour 8 cup s milk
1 teasp salt 1 teasp dry mustard 1/2 teasp cayenne pepper
two 10 oz. pkgs frozen chopped broccoli, thawed, drained well
1 cup fine chopped fresh red bell pepper
12 oz. extra sharp cheddar cheese - shredded green onion tops - garnish
melt butter in soup kettle over medium heat, slowly stir in flour - cooking
and stirring until bubbly, about 1-2 mins. Add milk, salt, musard and cayenne.
Bring to a simmer, stirring frequently. Add broccoli and red pepper, returning
to a boil. Reduce heat to low, simmer uncovered for about 5 mins, stirring
occasionally. Add the cheese, stirring over low heat just until melted.
Do not let boil again.
Ladle soup into bowls, garnish with green onions.
