4 large tomatoes, peeled/seeded/diced
14 fresh basil leaves
4 cups tomato juice
1/2 cup butter
1 cup heavy whipping cream
salt and pepper to taste
Place tomatoes and juice in a soup pot over medium heat, simmer for 30 mins.
Puree along with the basil leaves and return to the pot, add in the cream and
the butter, season with salt and pepper. Heat thru, but do NOT boil. Makes 4 servings.
