2 Tablsp extra virgin olive oil 1 large onion, chopped
1 green bell pepper, chopped 4 cloves of garlic, minced
1 large sweet potato, peeled, cut in 1/2" chunks 2 Tablsp chili powder
1/2 teasp grd cumin two 15 oz cans black beans, rinsed/drained
two 14.5 oz cans diced tomatoes 4.5 oz. can chopped green chilies, draind
1 ripe avocado, cleaned/chopped
Heat oil in large kettle, saute onion, bell pepper and potato for 5 mins,
stirring frequently. Add in the garlic, chili powder and cumin and cook
for another minute or so. Add in the beans, tomatoes and chili peppers
Bring to a boil, reduce heat and simmer for 15 mins or until the potato is
tender. Spoon into serving bowls and garnish with the avocado.
