1 Tablsp oil 1 cup diced onion 1/2 medium Gala apple, peeled/diced
14 oz. can chicken broth 1/2 of a 15 oz. can solid pack pumpkin
2 Tablsp sugar or splenda 1 1/2 teasp cinnamon
1/2 teasp grd cumin 1/2 teasp salt pinch of cayenne pepper
1 1/2 cups half n half 1/4 cup sour cream (Garnish)
Heat oil in a large saucepan over medium high heat. Add onions and the
apple and saute for 5 mins, stirring until onions begin to brown. Put this
into a blender with about 1 cup of the broth and puree until smooth. Return
to the pan and add the remaining ingredients except the half n half and the
sour cream. Bring to a boil over high heat, reduce and cover, simmer for
15 mins. Remove from heat and gradually add in the half n half. Stir well.
Serve with a dollop of sour cream on each bowl.
