8 oz. whole wheat pasta - rotini or penne - cooked and drained
Put pasta into a parge bowl, set aside.
In a large skillet, heat 1/4 cup extra virgin olive oil over medium high heat. Add:
1 medium sweet onion, diced 1 bell pepper, thinly sliced
3 cloves of garlic, minced
Cook, stirring occasionally for 3 minutes, or until lightly browned. Add in:
1 carrot, sliced 1 small yellow squash OR zucchini squash, sliced
1 cup broccoli florets 1/2 teasp black pepper 1/4 teasp crushed red pepper
Cook, stirring constantly for 5 mins more, until all are tender crisp.
add In 1 1/2 cups thawed small shrimp and if desired, 1/2 cup grape tomatoes, halved.
Cook for 3 mins more, or until heated thru. Pour over the pasta and toss well, add:
1/3 cup fresh grated Parmesan cheese.
Serve immediately.
