take a variety of fresh vegetables.....
it was decided to peel and cut them all about the
same size to work the best.
toss with olive oil , salt and pepper and any herbs
you might like. Put into a shallow roasting pan with
a lip. bake about 375-400 degrees for 30 mins,
turning occasionally so they don't burn.
