one large head of fresh cauliflower, cut into 1" pieces
Cook in a large pot of boiling water with 1 Tablsp of salt for about 7 mins, drain well.
Place in a sprayed 9x13 pan. Set aside.
In a small saucepan, heat 2 cups of milk until small bubbles form at the edge, take off heat.
In a large saucepan over low heat, melt 2 Tablsp unsalted butter. Add in:
2 Tablsp flour and 1 teasp dry mustard Whisk until smooth. Cook, stirring often, then add
in the milk and continue cooking until creamy, about 5 mins. Add:
1/2 cup shredded cheddar cheese, 1/2 cup shredded gouda cheese
pinch or two of cayenne pepper, salt and pepper to taste Stir untl smooth.
Pour this sauce evenly over the cauliflower. Sprinkle with a few Tablsp of bread crumbs.
Pop this under the broiler and broil until golden.
