Vegetable & Side Dishes

1 large onion, finely chopped      4 cloves of garlic, minced

1 Tablsp olive oil                              1 medium carrot, shredded

1-2 teasp chili powder        1 teasp grd cumin         1/4 teasp black pepper

15 oz. can pinto beans, rinsed and drained

15 oz. can black beans, rinsed and drained

1 1/2 cups quick oats                       2 Tablsp dijon mustard

2 Tablsp reduced sodium soy sauce             1 Tablsp catsup

In a skillet, heat oil, saute onion and garlic for a few minutes, then add in carrot,

chili powder and cumin.  Cook a couple of mins more.  Remove from heat and

set aside.  In a large bowl, mash beans, add oats, mustard, soy sauce, catsup, pepper

and the carrot mixture.  Blend well, form into 8 patties.  Grill for 4-5 mins on each side.

Serve on a hamburger bun with lettuce and salsa!
